You will love this dinner!  Gorgeous, charred veggies nestled together with juicy chicken, and a simple but delicious marinade made with Adoro Olive Oil and their Grilled Lemon Balsamic Vinegar. Its easy to make and is great for those nights you just want to get supper going and sit down for a minute!  This makes six servings.  I made a double recipe in my video because the leftovers the next day are amazing!

-1/2 cup Adoro Olive Oil.  I used Ogliorola, but go into their store and taste the options they have…just use your favourite!

-the juice of one lemon, or 3 TBSP of Adoro’s Grilled Lemon Balsamic Vinegar

-3 cloves of minced garlic

-2 tsp dried oregano

-1 tsp dried thyme

-1 tsp Dijon mustard

-salt and pepper to taste

-I used boneless chicken thighs but bone in work just as well

-2 zucchini, cut in half and sliced

-I yellow pepper and one red pepper chopped into one-inch chunks

-half a red onion sliced in wedges

-two cups of cherry or grape tomatoes, whole

-optional: half a cup of crumbled feta cheese and or pitted kalamata olives for the topping

 

Preheat the oven to 425°F. In your marinade shaker or in a bowl with a whisk, combine Adoro Olive Oil, lemon vinegar or juice, garlic, oregano, thyme, Dijon mustard, salt, and pepper.

Put those chicken thighs in a bowl and pour about half the marinade on them and get in there with your hands to make sure they’re all covered.

While the chicken is marinating (10-15 minutes), chop your veggies and coat them with the rest of the marinade.  You can just do this while you spread the veggies out on a large baking sheet.

Take the chicken thighs and snug them in among the veggies.  It doesn’t have to be perfect!

Put the pan in the oven for about 45 minutes, and go get a glass of wine and put your feet up for a bit.

After you remove this pan of deliciousness, add the feta and kalamata olives to the top if you want.

I serve this over brown rice but I think it would also go great with small pasta or potatoes. Or just like that out of the oven.
