You will need:

Phyllo pastry—thawed

A block of Feta Cheese

Really good olive oil…I used the Adoro Coratino, but you could use any of their flavoured oils instead.  Basil, Rosemary, Butter.

Honey and Sesame Seeds (optional)

For flavour: 

The Grilled Lemon Balsamic was outstanding in this and next time I think I’ll use the Italian Raspberry right on the feta before I roll them up in phyllo.  My daughter suggested a little olive paste spread on top of the cheese would be good too.  So many ideas!

Directions:

Cut the feta cheese into sticks and let them sit on a sheet of paper towel for a few minutes so they’re not too soggy.

At this point, you can also sprinkle in some flavour from one of the vinegars, or add olive paste or roasted peppers!

Pour olive oil into a little bowl and use your favourite pastry brush for this.

Place a sheet (or two if you like it crunchier) on a dry cutting board and slice in half longways.

Brush your phyllo with olive oil gently.

Add your stick of cheese and roll up like a little package, making sure to tuck in the ends, and make sure the outside is also oiled.

Preheat the air fryer for 4 minutes at 350, and then add a little spritz of cooking oil spray.

Place your little phyllo packages in the air fryer in one layer at 350 for 9 minutes or until they are the golden colour you like.

Remove from air fryer with tongs and place on a plate.  If you want your appetizers to be sweet, add a drizzle of golden honey on top and sprinkle with sesame seeds.  Any of the Adoro sweet balsamic will work as well…the Italian Raspberry was SOOO good.  The Pomegranate would be good as well as my favourite, the Grilled Lemon.
