The Holidays are always full of commitments for us and seem to never have enough hours in a day to do everything you want to get done.  These are Rescue Desert!  30 minute bail-out recipes to have you the toast of every party, gathering or bake sale.

 

Oreo Stuffed Rice Crispy Square

The Holidays are about indulgence and at time excess.  Well, this recipe is a check and mate to everything bad for you but so freakin’ good to eat.  30 Minutes to make…far longer to work off with that New Year’s resolution to get in shape.

¼ C butter

5 C miniature or 40 regular marshmallows

½  tsp vanilla extract (optional)

6 Cups Rice Crispies

1 Bag of Oreos

1 Bag of Gummy Bears

1 Small bag of M&M’s or Smarties

½ C Skor bits

1 Cup Froot Loops (or Capt’N Crunch works great but has less festive colour)

**To be honest toss just about anything in this messy master piece**

 

In large saucepan over low heat, melt the butter. Add marshmallows and stir until everything melted and well blended. Remove from heat.

Stir in vanilla. Add cereal and keep stiring until coated.

Add everything you want to add to this except the cookies and give it a good mix.

Using lightly buttered spatula, press 1st layer into buttered 13×9 pan (about ½ the sauce pan).

Next layer should be your Oreos.  Keep formation tight.

Put on remaining mix from saucepan.  Press down with spatula and let cool before cutting into squares.

Short-Bread Recipe

Simple, fast and easy recipe to make.  You can make them with the kids, cut them into shapes or drizzle with chocolate to dress them up.  This makes about a dozen small cookies.

1 C all-purpose flour

¼ C icing sugar

½ C Softened butter (DO NOT use margarine)

Pinch of salt

¼ Tsp Vanilla

 

Pre-heat oven to 325C.

Mix all ingredients together in a bowl.  Roll out dough in your hands to create quarter sized balls.

Place on a wax paper lined cookie sheet.

Press down center of cookie with a fork to create a uniform thickness.

Bake for about 16-20 minutes (you want to see a light golden colour forming to the underside edge of the cookie.)

Remove from oven and let cool completely before eating.

 

Chickpea Shortbread Recipe

For the gluten-free folks, you would be hard pressed to find a tastier recipe.  The addition of Cardamom really helps this stand out.  This makes about a dozen small cookies.

1 C Chickpea Flour

¼ C Icing Sugar

½ C Softened butter (DO NOT use margarine)

Pinch of salt

¼ Tsp Cardamom

 

Pre-heat oven to 325C.

Mix all ingredients together in a bowl.  Roll out dough in your hands to create quarter sized balls.

Place on a wax paper lined cookie sheet.

Press down center of cookie with a fork to create a uniform thickness.
